Mesquite Honey is a lightly floral and pleasantly mild honey produced in the Desert Southwest of the US and Northern Mexico. To produce this premium honey, bees source nectar from the Honey Mesquite (Prosopis glandulosa) as well as the lesser known Screwbean Mesquite (Prosopis pubescens). While there are plenty of mesquite trees in Central Texas, mesquite honey crops will never be reliable in this area. Mesquite needs drought conditions to produce sufficient nectar for bees to put up surplus stores. We know this new offering at Walker Honey Farm Store is going to be a crowd favorite, so we have worked to establish long-term relationships with reliable producers. I grew up in the Southwest where mesquite trees abound. Living in New England now, Mesquite honey is not easy to find. It is such great honey and, for me, a nice connection.
